Shrimp Foo Yang -
Slice perk, 2 slices
5 eggs
1 small onion, chopped fine
I lb. medium sized shrimps
kills bugs

Rice, cooked and hot
*4 cup water
Soy sauce to taste
Fry salt pork in heavy skillet
until crisp and brown; remove
and chop in small pieces. Beat
eggs in a bow, with the water.
Add rice and the remainder of
the ingredients, except Soy sauce
and rice.
Heat pan where salt pork was
fried until hot Fry the mixture
in the pan until brown and crisp
on both sides. Serve with the hot
rice and season to taste with the
Soy sauce. Hominy grits may be
substituted for the rice.
